Steps to make to make Dhaba Style Soya Chaap (gravy)

  1. Heat sufficient oil in a Kadai. Gently slide in the soya chaap, deep fry till golden brown and crisp. Drain on absorbent paper.
  2. Transfer chaap in a bowl add hung curd, red chilli powder, cumin powder, turmeric powder, garam masala, salt, mix till well combined.
  3. To make gravy heat ghee in a pan add black peppercorns, bay leaf, cinnamon stick, cumin seeds, green cardamom and saute till fragrant.
  4. Add onions and mix well, cook till they turn golden brown.
  5. Add ginger-garlic paste, saute for a minute. Add red chilli powder, turmeric powder, mix well, cook for a minute.
  6. Add tomato puree and mix. Add salt and mix, cover, and cook till the fat separates.
  7. Add the soya chaap mixture, 1/4 cup water, and mix well. Cover and cook for 2 minutes.
  8. Add 3/4 cup water mix well, cover, and cook for 8 to 10 minutes on low to medium flame.
  9. Add kasuri methi, chaat masala, garam masala mix well. Switch off the flame.
  10. Garnish with fresh cream, coriander sprig.
  11. Serve hot with chapati or parantha.
